Garlic Parmesan Kale Pasta

Quick, easy, delicious, healthy! What more could you want? Garlic parmesan kale pasta is the perfect go-to side dish for any meal because it is so simple and it takes care of your veggies AND starch! Doesn’t this recipe seem so easy to do?! Sometimes I definitely struggle with meal planning. I have gotten better, but I still have trouble brainstorming on coming up with a cohesive veggie and starch that is still flavorful and delicious. I mean, there have been plenty of times that I just microwave a bowl of frozen corn and cook some rice in the rice cooker and call it a day. There’s nothing wrong with that, but there’s only so much corn and rice you can eat LOL. I love garlic parmesan kale pasta because you get a two-for-one deal!

And you can sneak in those greens for the picky eaters of your family. Cover anything in cheese and I’ll eat it! To make it an even easier dish, I opt for pre-washed and chopped kale from the grocery store. That way, all I have to do is drop it in the pan and sauté away.  

Angel hair pasta is great for this dish because it cooks much faster than spaghetti noodles and keeps the dish pretty light and airy. You can also choose whole wheat pasta to make this dish even healthier! Or substitute any other pasta you like. The possibilities are endless!

Garlic Parmesan Kale Pasta

Ingredients

  • 1 lb kale
  • 1 lb angel hair pasta
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 2 cloves garlic minced
  • ½ cup grated Parmesan
  • Salt and pepper to taste
  • Red pepper flakes to taste (optional)

Instructions

  1. Bring a large pot of water to a boil. Once boiling, add in pasta and cook until al dente (about 7 minutes). Drain pasta in a colander and mix in a little bit of olive oil. Return to pot.
  2. While pasta is cooking, pull the kale leaves from the stems and tear into small 1- to 2-inch pieces. Rinse kale under cool running water and allow to drain.
  3. Add the olive oil, butter and garlic to a large skillet. Cook over medium heat for about 1-2 minutes, until the garlic is fragrant and soft.
  4. Add the kale and continue to sauté for about 5-7 minutes until the kale is wilted and turned a deep green color. Remove from heat.
  5. Add sautéed kale to drained pasta and toss together. Allow to cool for a bit (so to not melt the Parmesan).
  6. Season with salt, pepper and red pepper flakes (optional) to your liking. Toss in Parmesan cheese to coat the noodles and serve warm.
